Understanding food safety legislation, legal duties, enforcement, and the importance of due diligence.

Lesson 2: Food Safety Hazards & Cross-Contamination
Biological, chemical and physical hazards, preventing contamination, and the use of colour-coded equipment.

Lesson 3: Allergens & Food Intolerances
Allergen awareness, legal requirements, preventing cross-contact, and managing allergen risks safely.

Lesson 4: Temperature Control & Food Storage
Safe temperature limits, high-risk foods, fridge organisation, stock rotation, thawing, cooking, cooling and reheating.

Lesson 5: Personal Hygiene & Safe Food Handling
Hand hygiene, protective clothing, illness reporting, and personal responsibility for food safety.

Lesson 6: Pests & Pest Control
Common pests, signs of infestation, prevention measures, and reporting procedures.

Lesson 7: Cleaning, Disinfection & Sanitisation
Correct cleaning methods, use of chemicals, contact times, and maintaining hygienic environments.

Lesson 8: Food Safety Management Systems & HACCP
Understanding food safety systems, monitoring, corrective actions, record keeping and compliance.
